To make Blueberry Muffins
2 large eggs
4 tablespoons melted unsalted butter or butter substitute
1 cup milk, non-dairy milk or buttermilk
1/4 teaspoon cinnamon (optional)
Preheat oven to 350°F. Grease only the bottom of a muffin pan with shortening or line with baking cups. Soak the dried blueberries in a cup of water for 5 minutes or more. Beat the eggs, butter and milk in a large bowl with a whisk until well mixed. Stir in the blueberry muffin mix (add cinnamon if you like) until the flour is moistened. Drain the water from the blueberries and fold them into the batter. The batter will be slightly lumpy. Spoon the batter, divided evenly, into the prepared muffin pan. Bake 20 to 30 minutes or until golden brown. Immediately remove the muffins from the pan to a wire cooling rack.
Keep box dry and at room temperature (59°-75°F [15°-24°C]).
