Harvested from the husk-covered ears of the barley plant, a type of grass, barley is stripped of its tough, inedible outer coating and then polished to create a smooth, shiny, pearlescent grain. Though not considered a whole grain because its outer layers have been removed, pearled barley cooks more quickly than whole-grain hulled barley and boasts a more tender texture.

Rinse first, then combine one cup of pearled barley with 2 cups of water in a large pot. Bring water to a boil, reduce heat and simmer for 30 to 45 minutes, or longer for softer texture. Fluff with a fork, and serve or add to recipes as desired. For extra flavor, try cooking hulled barley in stock or broth instead of water.
