To make a Pao de Queijo
(Brazilian Cheese Bread)
Makes Approximately 30 small cheese breads
4 cups Vitacost® Tapioca Flour
1 1/2 cups grated Parmesan cheese
2 cups milk
2/3 cups vegetable oil
2 eggs, beaten
1/4 teaspoon xanthan gum
1/2 teaspoon salt
Preheat oven to 350°F. Place tapioca flour in a large mixing bowl. In a medium sauce pan, combine xanthan gum and milk and bring to a boil. Then, adding slowly, mix the liquid into the flour. Next, slowly incorporate the beaten eggs and Parmesan cheese. Let the mixture cool for 10 minutes or more. Pour a small amount of oil in the palms of your hands and form 2-inch cheese balls placing them on a lightly oiled cookie sheet. Bake for 20 minutes or until the top is lightly browned.
Keep box dry and at room temperature (59°-75°F [15°-24°C]).
