Yellow split peas are seeds that grow in plump pods on the field pea (Pisum sativum) plant. Picked when mature, peeled and then dried, they start as round globes, then split in half naturally—becoming flat little ovals that look like lentils. Yellow split peas and green split peas are different varieties of the same seed—similar in taste, but the yellow variety is slightly milder.

To cook, combine one cup of yellow split peas with 3 cups of water in a large pot. Bring water to a boil, reduce heat and simmer for 30 to 40 minutes.
