Yacon (pronounced yah-cone) is a root vegetable similar in appearance to a potato, with a crisp, juicy texture like an apple or pear and slightly sweet, melon-like flavor. From a plant related to the sunflower, yacon thrives in the mountainous regions of South America, where it’s been a staple part of the diet for centuries. It’s traditionally enjoyed raw, just like fruit, or roasted, baked or added to stir-fry dishes.
Yacon is known for being low in calories, supplying minerals such as potassium and calcium, along with inulin—a type of soluble dietary fiber (also found in chicory root) that serves as a prebiotic, or food source for “good” bacteria (probiotics) in the digestive tract.
