You can’t beat a multi-layer parfait for deliciousness, but it’s also a heck of a lot of fun to eat. Discovering new flavors and textures in each layer feels a bit Wonka-like. But this recipe here isn’t laden with the processed sugars you find in whipped cream and syrup parfaits. With rich layers made of berries, banana, honey and non-dairy coconut yogurt, this creamy treat is loaded with good, healthy stuff that just tastes like a splurge.

Berry-Chia Coconut Yogurt Parfaits (Dairy Free)

Ingredients

Bottom layer

  • 1 cup unsweetened vanilla coconut yogurt
  • 1 banana mashed
  • 2 tsp. chia seeds
  • 4 Tbsp. blueberries fresh or frozen

Middle layer

Top layer

  • 1 cup unsweetened vanilla coconut yogurt
  • 1 cup blackberries fresh or frozen
  • 2 tsp. honey

Toppings

Instructions

  1. Bottom layer: In bowl, mash banana and stir in yogurt and chia seeds.
  2. In two 12-oz. mason jars or glasses, divide banana mixture. Sprinkle on blueberries.
  3. Middle layer: In blender, combine yogurt, blueberries, collagen and honey until smooth. Pour half into each glass. Top each with sliced banana.
  4. Top layer: In blender, blend yogurt, blackberries and honey. Pour into each parfait.
  5. Top parfaits with coconut flakes, berries and mint leaves. Serve immediately.
