With rich layers made of berries, banana, honey and non-dairy coconut yogurt, this creamy treat is loaded with good, healthy stuff that just tastes like a splurge.

Berry-Chia Coconut Yogurt Parfaits (Dairy Free)

Ingredients
Bottom layer
- 1 cup unsweetened vanilla coconut yogurt
- 1 banana mashed
- 2 tsp. chia seeds
- 4 Tbsp. blueberries fresh or frozen
Middle layer
- 1 cup unsweetened vanilla coconut yogurt
- ½ cup blueberries fresh or frozen
- 1 scoop French vanilla collagen
- 2 tsp. honey
- 1 small banana sliced
Top layer
- 1 cup unsweetened vanilla coconut yogurt
- 1 cup blackberries fresh or frozen
- 2 tsp. honey
Toppings
- Coconut flakes
- Blackberries or blueberries
- Mint leaves
Instructions

Bottom layer: In bowl, mash banana and stir in yogurt and chia seeds.

In two 12-oz. mason jars or glasses, divide banana mixture. Sprinkle on blueberries.

Middle layer: In blender, combine yogurt, blueberries, collagen and honey until smooth. Pour half into each glass. Top each with sliced banana.

Top layer: In blender, blend yogurt, blackberries and honey. Pour into each parfait.

Top parfaits with coconut flakes, berries and mint leaves. Serve immediately.
