Do you have three minutes? Then you have breakfast. No, it’s not a boring bowl of oats or a frozen waffle you threw in the toaster oven. Your microwave, however, will come in handy. The heat-and-eat kitchen appliance can actually serve up bakery-level muffins. In this case, the recipe only makes one muffin, but it’s a warm, pumpkin treat that could easily be doubled. Of course, if you want more than one breakfast in a mug, you’ll need more than three minutes.

Makes 1 muffin


1 Tbsp. Enjoy Life Semi-Sweet Chocolate Mini Chips
1 Tbsp. Vitacost Certified Organic Refined Coconut Oil
1/2 cup water
1/2 cup pumpkin puree
3/4 cup Enjoy Life Foods Muffin Mix


  1. In a mug, add all ingredients and stir to combine.
  2. Microwave 3 minutes.
