Chia-Dijon Vinaigrette


¾ cup extra virgin olive oil
½ cup green onions, chopped
1 Tbsp. apple cider vinegar
1 Tbsp. Dijon mustard
1 Tbsp. chia seeds
Freshly ground black pepper, optional, to taste


  1. In an airtight jar, combine all ingredients and shake until mixed. Drizzle over salad or use as a dipping sauce.
  2. Store refrigerated for up to 10 days.
