Falling in love with fritters is easy. Case in point? This recipe! Unlike other fritters, which are almost always deep fried, these clever chickpea-based patties are baked in the oven. They come out perfectly crisp on the outside, yet light and chewy on the inside. Serve them with homemade tzatziki sauce – whipped up simply with Greek yogurt and a splash of lemon juice – and a crisp greens salad for a head-over-heels healthy meal.
