Curry Lentil Salad with Cashews and Raisins

- 1½ cups cooked brown lentils mashed
- 3 Tbsp. cashews toasted & chopped
- 2 Tbsp. raisins soaked to soften
- 2 Tbsp. scallions thinly sliced
- 2 Tbsp. vegan mayo (or tofu sour cream)
- 1 large celery stalk diced
- 1½ tsp. curry powder
- Salt to taste
- Pepper to taste
