Double Chocolate Skillet Brownies (Gluten-Free)

With a perfect crinkle top, fudgy center and melty chocolate chips in every bite, these decadent brownies are loaded with rich, double chocolate goodness – and they’re made with ingredients you can feel good about. Swapping traditional all-purpose flour for almond meal keeps them gluten-free, and by using vegan-friendly butter, they make a heavenly dairy-free dessert too. Though divine on their own, these intensely gooey treats also go well topped with vanilla ice cream or a homemade dairy-free whipped cream.

Instructions

  1. Preheat oven to 350 degrees F. Coat 8” cast iron skillet with butter or coconut oil.
  2. In small saucepan, heat butter, 1/2 cup chocolate chips and cacao powder, stirring occasionally, until melted and smooth.
  3. In large mixing bowl, beat eggs and coconut sugar on high speed 3 to 5 minutes, until mixture is light in color.
  4. In small amounts, slowly beat in melted chocolate mixture until combined.
  5. In separate bowl, stir together almond meal flour, coconut sugar, arrowroot powder and salt.
  6. Gently fold dry ingredients into wet ingredients until well combined, taking care not to overmix.
  7. Pour brownie batter into prepared skillet. Top with remaining chocolate chips.
  8. Bake 16 to 20 minutes, until sides begin to pull away from skillet and center is solid.
  9. Remove from oven; let cool 20 minutes.

Recipe Notes

  • For vegan brownies: use vegan-friendly butter and replace the eggs with your favorite egg replacer.
