Besides, butter cookies have come a long way since those spiraled, pretzel-shaped and sugar-sprinkled treats you can find at the local drugstore. Nowadays, ghee is the gold standard for melt-in-your-mouth butter cookies. The clarified butter has a high smoke point, which makes baking with ghee a no-brainer. Plus, you get to watch your loved one enjoy something you made. It doesn’t get any “butter” than that!

Ingredients

1-1/4 cups almond flour
1/2 cup granulated sugar
1/2 cup ghee
1/2 tsp. vanilla extract
1 egg

Directions

1. Preheat oven to 350 degrees F.

2. In a large bowl, combine all ingredients and mix well.

3. Place dough in refrigerator for 30 minutes to chill.

4. Form dough into balls, place on a non-stick baking sheet and use a fork to flatten into cookie rounds.

5. Bake 12 minutes, or until edges begin to crisp.
