This pear cranberry crisp offers a sugary, crunchy crust nestled above a fruity filling that combines the tart flavor of cranberries and the sweet, buttery taste of pears. Easy to assemble, quick to make (takes only about 40 minutes from start to finish) and undeniably delicious, this dish deserves a spot on your dessert table.

Pear Cranberry Crisp

Ingredients

Filling

  • 2 cups whole cranberries
  • 2 cups ripe pears peeled and diced
  • ¼ cup organic turbinado sugar
  • 1 Tbsp. lemon zest
  • 2 Tbsp. lemon juice
  • 1 tsp. vanilla
  • tsp. salt

Topping

Instructions

  1. Preheat oven to 375 degrees F.
  2. In large mixing bowl, combine all filling ingredients.
  3. Pour filling into 9-inch pie pan.
  4. In clean mixing bowl, combine topping ingredients. Use a fork or your hands to mix crumble until oil is mixed into oats.
  5. Sprinkle a thick, even layer of crumble on top of filling.
  6. Bake for 30 minutes until topping is golden brown.
  7. Serve warm topped with vanilla coconut milk ice cream or whipped topping.
