- 1 Tbsp. lemon zest
- 2 Tbsp. lemon juice
- 1 tsp. vanilla

Topping
- 1½ cup organic, gluten-free rolled oats
- ½ cup garbanzo flour
- ½ cup organic turbinado sugar
- 4 Tbsp. coconut oil chilled
Instructions

In large mixing bowl, combine all filling ingredients.

Pour filling into 9-inch pie pan.

In clean mixing bowl, combine topping ingredients. Use a fork or your hands to mix crumble until oil is mixed into oats.
