These keto-friendly “cheese” rolls are inspired by the soft, chewy Brazilian cheese bread, pão de queijo. With this recipe, you get your doughy, cheesy fix without the carbs or the dairy! Start a dough with almond flour, add an egg replacer like chia-flax substitute, choose an almond-based vegan cheese, then finalize the recipe with apple cider vinegar and baking powder. Form rolls and bake until golden brown. The result is 14 soft, “cheesy” rolls that freeze well (if they ever make it past the cooling rack!).
