Made with Miracle Noodle Rice along with cauliflower rice instead of grains, this dish is packed with veggies, protein and savory goodness, leaving you craving seconds.

Low-Carb Chinese Fried Rice

Ingredients
- 1 package of Miracle Rice
- 1/2 cup cauliflower rice
- 2 cups mixed vegetables
- 5-6 prawns shelled and deveined
- 1 large egg beaten
- 2 cloves garlic minced
- 1 Tbsp. coconut aminos
- Olive oil
Instructions

In food processor, pulse cauliflower into rice-like shape. Set aside.

Heat wok with olive oil and sauté garlic. Add prawns and stir fry for one minute.

Add mixed vegetables and continue stir-frying.

Add in cauliflower rice and Miracle Noodle rice and stir evenly.

Cover wok and cook for 2 minutes.

Create hole in center in of rice, add oil and pour in beaten egg. Stir fry to evenly distribute egg and add coconut aminos.

Cover wok and cook for 2 minutes.

Transfer to serving bowl.
