Lucky Charm Four Leaf Clover Cookies

Makes 4 cookies

Cookies

2 oz. sweet potato, baked, peeled and mashed
2 Tbsp. Nutiva Organic Coconut Flour
1 scoop Quest Vanilla Milkshake Protein Powder
1 Tbsp. Sweet Spreads Maple Pancake Coconutter
1 Tbsp. liquid egg whites
½ tsp. vanilla extract
½ tsp. cinnamon

Icing

1 scoop Quest Vanilla Milkshake Protein Powder
3 Tbsp. unsweetened cashew milk
3-4 drops green food coloring

Green sugar sprinkles for topping (optional)

Directions

  1. Preheat oven to 350 degrees F and lay out Silpat or wax paper.
  2. In a large bowl, mix all cookie ingredients together until well-combined.
  3. Roll out cookie batter on Silpat sheet or wax paper, forming a rectangle.
  4. Using a heart-shaped cookie cutter, cut out 16 hearts and reserve all scraps.
  5. Arrange hearts into four leaf clovers to make 4 clover cookies. There may be space in the middle. Use the scraps to fill in any spaces and create stems for the clovers.
  6. Bake for 7 minutes, or until slightly golden. Let cool while you prepare the icing.
  7. In a small bowl, stir together all icing ingredients until well-blended and color is as green as you desire.
  8. Frost cooled cookies and top with green sprinkles for extra pizazz.
