Whether you’re haunting a house party or casting spells during a scary movie marathon, add a festive touch to your Halloween spread with these orange bell pepper jack-o’-lanterns. They’re sure to bewitch your guests, not to mention any ghosts, ghouls and goblins lurking about. Stuffed with superfood guacamole, this is one spooky holiday treat you can enjoy without any of the guilt that usually sets in after a witchin’ All Hallows Eve.
Ingredients
Orange bell peppers (use ones that can stand flat on their own)
2 Tbsp. hemp seeds
3 avocados
1/4 cup red onion, diced
2 tomatoes, diced
1/4 tsp. smoked paprika
1 tsp. garlic powder
Vegan Worcestershire, to taste
Salt & pepper, to taste
Lime juice & zest, to taste
Cilantro, optional
Directions
- In a large bowl, combine all ingredients (except for the bell peppers). Mash and mix guacamole ingredients until desired consistency is reached. Set aside.
- Pick the best side of each bell pepper. Use a sharp knife and begin to gently mark a crescent-shaped mouth, adding teeth if desired, and two triangles for eyes. If you’re happy with your design, cut the shapes out of the peppers.
- Gently slice off the top of the peppers. Grab and twist off the seeds. Be sure to remove all seeds, running the stem under water, if necessary.
- Fill inside of pepper with guacamole, pushing a bit out through the eyes and face. Place top back on bell pepper.
- Serve immediately.
