Easy Roasted Caramelized Carrots

Instructions

  1. Preheat oven to 425 degrees F. Peel and slice carrots lengthwise.
  2. Toss carrots in coconut oil, thyme, salt and pepper.
  3. Roast for 20 minutes, until carrots have caramelized and are tender.
  4. Top with fresh parsley before serving.
