Easy Roasted Caramelized Carrots

- 2 lbs. carrots
- 2 Tbsp. coconut oil
- 2 tsp. thyme
- 1 tsp. kosher salt
- 1/2 tsp. black pepper
- 2 Tbsp. fresh parsley
