Salted Caramel Brownie Parfait Jars

Creamy and luscious, these dairy-free parfaits taste decidedly decadent, but offer better-for-you ingredients. A salted caramel mousse whips up beautifully with ripe avocado, coconut cream, a little sunflower butter and some sweet and salty additions. Spoon it over a gluten-free brownie (made from an almond-flour mix by Simple Mills!) and finish with a drizzle of melted organic vegan chocolate. While this recipe makes enough for six parfaits, you may want to find a bigger vessel and indulge the over-sized cravings that most certainly will occur.

Instructions

  1. Make brownies according to package instructions. Cut into squares that fit jar, bowl or cup used for serving.
  2. In high-speed blender, add all ingredients for mousse. Blend until whipped and completely smooth.
  3. In jar, parfait cup or bowl, place brownie. Add about 1/4 cup mousse on top. Repeat for six parfaits. (Note: Use larger jars, bowls or cups for three larger servings.)
  4. Melt chocolate gems or chips. Drizzle about 1 tablespoon into each jar.
  5. Finish by grating chocolate bar over each.
  6. Serve immediately.
