A mixture of fresh, wholesome ingredients and a zesty dressing, it’s a guaranteed crowd-pleaser, especially when served with homemade tortilla chips. This version features sugar-free apple cider vinaigrette and roasted pumpkin seeds for extra crunch. Grab your horse and Stetson and bring this dip to your next party or potluck.

  1. In large bowl, combine veggies, cilantro and pumpkin seeds. Gently fold in avocado.
  2. In small bowl, whisk together dressing and pour over veggie mixture. Stir to combine.
  3. Cover and chill until serving to allow flavors to blend.
  4. Serve as a dip. To make a complete meal, serve with chicken, fish or quinoa.
