Spinach & Goat Cheese Sauce

Ingredients

  • 3 cups chicken broth
  • ½ cup dry white wine
  • 3 Tbsp. lemon juice
  • 2 Tbsp. avocado oil or olive oil
  • 6 cloves garlic smashed
  • 8 oz. goat cheese
  • ½ tsp. salt
  • ¼ tsp. pepper
  • 6 cups fresh spinach chopped
  • 4 Tbsp. grass-fed, unsalted butter

Instructions

  1. In small saucepan, combine, chicken broth, wine, lemon juice, avocado oil and garlic.
  2. Bring mixture to boil, then reduce to simmer. Simmer 12-15 minutes, stirring occasionally, or until reduced by half.
  3. When reduced, remove garlic and add remaining ingredients to saucepan.
  4. Stir for 5-8 minutes, until spinach is melted, cheese is melted and ingredients are well incorporated.
  5. Continue to cook sauce for 3-4 minutes to achieve a thin consistency. For a thicker sauce, continue to cook for 8-10 minutes. Stir occasionally to prevent burning.
