Apple Walnut Quinoa Salad

Salad

  • 5 cups fresh spinach (chopped)
  • 2 cups cooked quinoa
  • 1 whole apple (sliced thin)
  • 1/3 cup dried cranberries
  • 1/3 cup crumbled goat cheese (or feta cheese)
  • 1/2 cup walnuts (roughly chopped)

Dressing

  • 1/3 cup olive oil
  • 1 Tbsp. lemon juice
  • 2 Tbsp. apple cider vinegar
  • 2 tsp. Dijon mustard
  • 1 tsp. minced garlic
  • Salt (to taste)
  • Black pepper (to taste)
  1. In large bowl, combine all salad ingredients.
  2. In small bowl, mix together all dressing ingredients.
  3. Pour dressing over salad, toss and serve.

Note: Add 4 oz. of grilled chicken to each serving for more protein.
