Creamy Cashew Vegan Mac & Cheese, Classic Sharp Cheddar

Boil 6 to 8 cups water. Season with salt to taste.
Add pasta. Boil for 8-10 minutes.
(Add 1-2 minutes for more tender pasta.)
Drain pasta. Don't rinse.
Add hot pasta back to pan and mix with creamy cashew sauce.
(Optional: To make it extra creamy, add some reserved pasta water to your liking.)

It’s made with plant-based ingredients and gluten-free pasta for a dish everyone can enjoy. A new take on a classic family fave, this mac’s rich flavor and creaminess will make it a go-to in your weeknight dinner rotation.
Vegan White Mac and Cheese
- 1 box Explore Cuisine chickpea fusilli
- 1-1/2 cups Sproud Original plant-based milk
- 2 Tbsp. Vegan butter
- 3 Tbsp. cashew cream cheese
- 1-½ cups vegan cheese
- 1/3 tsp. garlic salt
- 2 Tbsp. Bob’s Red Mill arrowroot powder
- Preheat oven to 400 degrees F.
- Cook pasta according to package directions, cooking for 7 minutes rather than 9-11. Drain and set aside.
- In 8” square baking dish, combine 1 cup vegan cheese and remaining ingredients. Stir until well combined.
- Stir in cooked pasta; top with remaining vegan cheese.
- Bake 15-20 minutes.
