Tropical Fruit Pizza Cookies

Tropical Fruit Pizza Cookies

Sugar cookies

  • 1-1/4 cups all-purpose flour
  • 1/4 tsp. baking powder
  • 1/2 tsp. baking soda
  • 1/4 tsp. salt
  • 1/2 cup butter (softened)
  • 3/4 cup sugar
  • 1 tsp. vanilla extract
  • 1 large egg (well beaten)

Frosting

  • 8 oz. cream cheese (softened)
  • 1/4 cup butter (softened)
  • 1 tsp. vanilla extract
  • 1 cup powdered sugar
  • 1/8 tsp. salt

Toppings

  • 8-10 strawberries (finely chopped)
  • 2 kiwis (finely chopped)
  • 1 mango (finely chopped)
  • 12 raspberries
  • 1 cup blueberries

Sugar cookies

  1. Preheat oven to 350 degrees F and line cookie sheet with parchment paper.
  2. In medium mixing bowl, add flour, baking powder, baking soda and salt. Mix well.
  3. In stand mixer bowl, add butter and sugar. Use beater attachment and mix until creamy.
  4. Add egg and vanilla extract. Mix well to combine.
  5. Add flour mixture and mix at low speed until combined.
  6. Divide dough into 12 pieces and shape into balls.
  7. Place balls on lined cookie sheet about 2 inches apart.
  8. Bake 10-12 minutes or until edges turn golden brown. Let cookies rest a few minutes before transferring to wire rack to cool.
  9. Make sure cookies are completely cool before frosting.

Frosting

  1. In stand mixer bowl, place cream cheese, butter, powdered sugar, vanilla essence and salt. Beat until mixture is smooth and creamy.
  2. Making the fruit pizza
  3. Spread frosting evenly on cookies.
  4. Top cookies with fruits. (Note: Use the recipe photo for inspiration.)
  5. Serve immediately after assembling.

To prep ahead, cookies and frosting can be made in advance. Fruits that don’t brown can be chopped ahead of time. Assemble just before serving.
