Cinnamon-Maple Sweet Potato Rounds

  1. Adjust oven rack to lowest placement and preheat 425 degrees F.
  2. Slice potato into ½-in. rounds and place on cookie sheet.
  3. Brush each round with coconut oil and a sprinkle of cinnamon and salt.
  4. Roast sweet potatoes 10 minutes, then flip and cook for additional 10 minutes until rounds are tender.
  5. In bowl, toss pecans (if using) in maple syrup. Spoon on top of sweet potato rounds. If you’re not using pecans, simply drizzle maple syrup on top and serve.
