Sweet, simple and nutritious, these potato rounds are the perfect side dish to any entrée. Not only is the recipe super easy to make, but it’s extremely versatile! Feel free to modify the ingredients to include your favorite flavors such as herbs and spices (dark chili powder may be a nice addition!). Not a fan of herbs? Opt to top your sliced spuds with pecans, pumpkin seeds or dried cranberries.
Cinnamon-Maple Sweet Potato Rounds

Ingredients
- 1 large sweet potato
- 1 Tbsp. Vitacost Extra Virgin Organic Coconut Oil , melted
- 1/4 tsp. cinnamon
- 3 Tbsp. maple syrup
- Pink Himalayan sea salt , to taste
- 1 oz. chopped pecans , optional
- Rosemary , optional
Instructions

Adjust oven rack to lowest placement and preheat 425 degrees F.

Slice potato into ½-in. rounds and place on cookie sheet.

Brush each round with coconut oil and a sprinkle of cinnamon and salt.

Roast sweet potatoes 10 minutes, then flip and cook for additional 10 minutes until rounds are tender.

In bowl, toss pecans (if using) in maple syrup. Spoon on top of sweet potato rounds. If you’re not using pecans, simply drizzle maple syrup on top and serve.
