Fill large glass bowl with water. Add 2 teaspoons salt. Set aside.

Using mandolin with 2.5 millimeter insert or knife, slice plantains into even slices. Let soak in salted water 10 minutes.

Preheat air fryer to 350 degrees F.

Drain water from plantain slices. Pat slices dry; reserve in separate, dry bowl.

Coat plantain slices with coconut oil. Evenly toss with turmeric powder. Arrange in single layer in air fryer (it’s fine if they overlap a little bit).

Cook 10 minutes, shaking halfway through. Continue cooking in 2-minute increments until desired crispiness is achieved.

Repeat air frying process with remaining plantain slices. Sprinkle with salt, if desired.

In medium bowl, use fork to mash avocado until desired texture is reached. Stir in lime juice, jalapeño, red onion, garlic, tomato, cilantro and pineapple juice. Season with salt, pepper and cumin. Stir in pineapple tidbits.
