Preheat oven to 350 degrees F. Grease 9-in. round cake pan.

In small pan, melt vegan butter. Stir in brown sugar and cinnamon, then spread evenly in cake pan.

Arrange apple slices over caramel layer.

In large bowl, whisk together flour, sugar, brown sugar, baking powder, baking soda, salt, cinnamon and nutmeg.

In another bowl, whisk milk, oil, vinegar and vanilla.

Pour wet ingredients into dry ingredients and mix just until combined (do not overmix).

Gently spread batter over apples.

Bake for 40–45 minutes, until toothpick inserted in center comes out clean.

Cool for 10 minutes, then run knife around the edges.

Invert onto plate while still warm.

Slice and serve warm or at room temperature.
