Ingredients
Salad
  • 3-4 cups cooked broccoli chopped
  • 2 carrots julienned
  • 1/2 cup purple cabbage thinly sliced
  • 1/2 purple onion julienned
  • 1 leaf lacinato kale thinly sliced
  • 1/2 cup pistachios roasted, salted & crushed
  • 1/2 cup dried cranberries soaked for 5 minutes
  • 1/2 celery stalk minced
Dressing
Instructions
  1. In large bowl, combine prepared salad ingredients.
  2. In a medium bowl, add dressing ingredients. Whisk until creamy. Adjust flavors to your liking.
  3. Drizzle dressing on veggies, toss and coat.
  4. Serve as-is or chill and serve later.
