Chicken with Homemade Cranberry Sauce

Ingredients
For cranberry sauce:
  • 2 cups fresh cranberries
  • cup water
  • cup orange juice with pulp
  • 2 whole star anise
  • cup sugar
For chicken:
Instructions
  1. Preheat oven to 400°F. Marinate chicken in olive oil, vinegar and spices while oven is heating.
  2. In medium saucepan, combine cranberries, water, orange juice, star anise and sugar. Bring to a boil. Remove from heat, stir and cover.
  3. Cook chicken for 25-35 minutes until juices run clear and chicken reaches internal temperature of 165°F.
  4. To serve, pour cranberry sauce over chicken or leave on side.
