Ingredients
Instructions
  1. In large skillet, sauté onion, carrot and celery in olive oil until softened.
  2. Add garlic, ginger, turmeric, cumin and paprika. Stir until fragrant.
  3. Stir in lentils, quinoa and veggie broth. Bring to boil.
  4. Lower heat and simmer 25–30 min until lentils are soft and quinoa is fluffy.
  5. Stir in coconut milk (if using) and lemon juice.
  6. Garnish with cilantro and enjoy.
