Aloha Protein Mini Bars Chocolate Chip Cookie Dough

vegan vanilla ice cream
Optional: Chocolate chips for melting
Instructions
Place two small scoops of vegan ice cream onto mini bar.
Place second bar on top of ice cream and gently press down to create sandwich.
Repeat until all sandwiches are complete and transfer to freezer.
Freeze sandwiches 2 hours or until solid.
Enjoy as-is or dip in melted chocolate for a touch more richness. Freeze an additional 20 minutes until chocolate is hardened.
