Preheat oven to 375 degrees F. Line sheet pan with parchment paper or non-stick cooking spray.

Arrange three shallow containers or pans on work surface.

In first container, mix flour, chili powder, cumin, salt and pepper until well combined. In second container, add breadcrumbs. In the third container, whisk eggs until smooth.

Dip tomato slice in egg mixture, then flour mixture, then egg mixture again, then flour mixture again and lastly into breadcrumbs until coated.

On sheet pan, arrange coated tomato slices. Brush tops with avocado oil.

Bake 25 to 35 minutes, flipping each slice at the halfway mark.

Remove from oven; let cool before serving.
