Ingredients
Melon base
Dragonfruit layer
Blue layer
Instructions
Layer 1
  1. In food processor, blend frozen melon, coconut cream, honey and collagen until smooth. Spread mixture into bowl or tray to form base layer.
Layer 2
  1. Blend dragonfruit, coconut cream, pomegranate powder, honey, lemon juice and collagen until smooth. Carefully layer this mixture over first layer. Freeze until firm.
Layer 3
  1. Blend bananas, coconut cream, honey, collagen, vanilla extract and blue spirulina until smooth. Spread over dragonfruit layer. Freeze again.
Serve
  1. Once fully frozen and firm, scoop layers into the emptied melon rind for stunning summer presentation.
