Enjoy the corn bread hot out of the oven or use this to make a wonderful stuffing! Micah's Mouthwatering Corn Bread Mix can also be used to make jalapeno cheddar cornbread, which is great with chili. 123 Gluten Free has a wonderful corn bread that is so enjoyable you can eat it alone! This mouthwatering recipe yields 16 large squares of corn bread goodness. There is an egg free recipe and a dairy free recipe on the box. With no trans fat and only 80 calories per serving you have a whole lot of loving southern style.
To Make Corn Bread:
1 package Micah's Mouthwatering Corn Bread Mix™
3 Tbsp. sugar (optional)
2 large eggs, room temperature
2/3 cup buttermilk
2/3 cup milk or milk substitute
2 Tbsp. unsalted butter or unsalted margarine, melted or oil.
Preheat oven to 425 degrees F. Generously grease 9" square pan with non-stick spray.
Place 1-2-3 Gluten Free® Micah's Mouthwatering Corn Bread Mix™ in bowl. Add sugar, eggs, buttermilk and milk and stir until combined. Stir in melted butter/oil.
Pour batter into pre-greased pan.
Bake for approximately 20 minutes, until top is golden brown and sides begin to pull away from pan. Baking times may vary by appliance.
Cut corn bread into squares. Serve warm. Makes 16 squares.
