You will need:
2 large eggs
¼ cup vegetable oil (Recommend light olive oil)
1 cup milk or non-dairy milk, or buttermilk
¼ teaspoon cinnamon (optional)
Preheat the oven to 350 degrees. Grease just the bottom of 12 regular size muffin cups with shortening, or line each cup with a baking cup. Beat the eggs, oil, and milk in a large bowl with a wire whisk until well mixed. Stir in the blueberry muffin mix (add cinnamon if you like) until the flour is moistened. The batter will be slightly lumpy. Spoon the batter into the greased muffin cups, dividing the batter evenly amount them. You can use an ice-cream scoop for this if available. Bake 20 to 30 minutes or until golden brown. Immediately remove the muffins from the pan to wire cooling rack. Serve warm or cool.
