Bob's Red Mill Hearty Whole Grain Bread Mix Gluten Free Description

Moist, delicious and bursting with whole grains and seeds. The flavor and texture are complex and deeply satisfying. Specially designed for those sensitive to wheat or gluten. For bread machine or by hand, this mix makes 1-1/2 lb loaf.


What You Need:

  • 1 3/4 cups Water
  • 1/4 cup Oil
  • 2 Eggs
  • 1 tsp. Cider Vinegar

Baking Instructions by Hand

1. Dissolve enclosed packet of yeast in 1 3/4 cups warm (110 deg. F.) water and let stand for 5 minutes to foam. Have all ingredients at room temperature.

2. Put dry mix in large mixing bowl (preferably use a stand mixer).

3. Add eggs, oil, cider vinegar, yeast-water mixture.

4. With mixer on low speed, blend all ingredients until smooth. Turn mixer to medium and beat 15 seconds or until mixture thickens slightly. Pour into generously greased 9x5-inch nonstick pan. Smooth top of dough with wet spatula.

5. Cover pan with plastic wrap and put in warm place (75 to 80 deg. F.) to rise for about 40-50 minutes or until dough is level with top of pan. Preheat oven to 375 deg. F.

6. Bake 60 to 65 minutes or until internal temperature of bread reaches 205 deg. F., covering bread with foil after it starts to brown. Remove pan from oven and cool bread in pan 5 minutes. Remove bread from pan and finish cooling on wire rack. Cool completely before slicing.


Bread Machine Baking Instructions (1 1/2 lb loaf):

Remove yeast packet from package. Have all ingredients at room temperature. Follow your specific machine instructions for adding yeast, the liquid and dry ingredients in the proper order. Be sure to whisk the water, oil, vinegar and eggs together before adding to bread machine. Set controls for setting recommended by manufacturer, or to white bread basic setting. Remove bread from bread machine and cool thoroughly on wire rack before slicing.

My preferred mix I've made many loaves of gluten-free bread using my own flour blends and have had good success - but, it is a real sacrifice of time and effort to do all the incremental measuring yourself. A friend suggested I try the Red Mill mixes - and - I did. And really really am happy with the results. I do tweak them, adding extra seeds, sometimes adding molasses, an extra egg, soda water - just a slight variation. My number one vote goes to this particular mix - both for texture, taste, and flexibility. The whole grain mix is now my standard go-to mix as a base for my gluten-free breads. I can make it either as a sweeter bread (more Squaw bread style with molasses) or straight forward rich grain bread with added sunflower/pumpkin seeds with some extra liquid and an additional egg. I highly recommend this mix to anyone looking for a wonderful full flavored, highly textured gluten-free bread. And - I can throw all the ingredients in a bread machine, set it, and go about my business and end up with a great loaf of bread! June 21, 2013
Tastes Really Good I've tried store bought gluten Free bread and did not like the consistency or taste. This product tastes great, holds up well, even better toasted. It is simple to make. i use egg substitute because my wife and I are Vegans. I have made it in a bread machine and mixed by hand. both methods are easy and fast. June 13, 2013
