Millet originated in China nearly 5000 years ago, making it one of the earliest cultivated grains. Whole Grain Millet is nutritious and a good source of protein, essential amino acids and fiber, with a distinctive, sweet flavor. It cooks quickly and is one of the most versatile of all grains. Makes a great hot breakfast cereal and a tasty side dish that's a unique alternative to potatoes or rice. Uncooked Millet can be added to breads and crackers for a hint of sweetness and crunch. Basic Cooking Instructions

Bring 2 cups water to a boil. Add ½ teaspoon salt, ½ cup millet and return to a boil. Cover and cook at lower heat setting for 35-40 minutes. Serve as a cereal with milk and honey or as a dinner side dish with melted butter.

Millet is Power food! I got turned on to eating cooked Millet as a breakfast carbohydrate with ground Sirloin for a pre-workout meal 2 hours before weight training by a friend. I used to eat the standard Oatmeal and Barley but switched to Millet and Quinoa when I started the Paleo-diet. My energy was much better with Millet than it ever was with Oatmeal. Plus it does not make me feel bloated or hungry after a few hours like I did with Oatmeal or Barley. I also found it easier to control my weight when I switched to Millet. 3 years later and I never eat anything else for my first meal of day. Bob's Red Mill Millet is always good and consistent (taste is excellent!).
