With this special blend of ingredients, including high fiber oat bran, wheat bran, soy flour and whole grain flaxseed meal, you can be sure that the few carbs you do eat are nutritious. Bob's Red Mill Low-Carb Bread Mix offers you easy-to-make homemade bread that's healthy, delicious, low in carbohydrates and a good source of dietary fiber.


Bread Machine Instructions

1 package Bob's Red Mill Low-Carb Bread Mix

3/4 cup Water

3/4 cup Whipping Cream

2 Tbsp. Canola Oil

1 Egg (slightly beaten)

1 yeast packet (included in package)


Add the ingredients to the bread maker in the following order:

Warm the water to 85-90F. Pour into bread machine pan. Add cream, oil, and egg. Add Bread Mix. Make shallow well in the center of bread mix; do not break through to liquid portion. Add yeast to the well. Set bread machine to basic normal bread setting, medium crust-setting, and 2 lb. size. Start bread machine. Bread cycle will take approximately 3 hours and 10 minutes.


Baking Instructions: By Hand For Conventional Ovens

(Package makes 1 loaf)

In mixing bowl, add warm water (90F), yeast and 1 tsp. of the bread mix. Let stand for 10 minutes. Warm cream to 90F and add to the yeast mixture. Then add oil, slightly beaten egg and bread mix. Combine and then knead mixture for 6-8 minutes. Place in well-greased bowl and then turn over to grease top. Cover and let rise in size, approx. 1 hour. Preheat over to 350 degrees. Punch down and form into loaf, fold ends under. Place in greased loaf pan and spray top with vegetable oil spray. Bake for 50-60 minutes. Cool before slicing.

Better texture & taste than other low carb breads I used my bread machine to make this on it's regular setting. I used it for sandwiches and toast. Best low carb bread mix I've found This makes a loaf of low carb bread I can totally live with. I've made several low carb breads from scratch using my bread maker, but Bob's has them all beat for flavor and texture. I order 4 or 5 at a time and pop them in the freezer for use as I need them, and they always bake up just fine. The loaves are very large (I have a 2-lb. bread maker), so I cut each slice in half and use just one full slice for a sandwich. But it's really best toasted - with butter and sweetener and cinnamon, it's like dessert! May 11, 2014

pretty darn good Made it in my bread machine, and it baked a huge loaf of bread. Haven't tried it toasted yet, but considering that it is low carb, the taste is good. Note, I had to add a lot more water for my bread machine to mix it into a smooth dough. March 13, 2013
