Not sure about the flavor
This is probably a good product for your health. I mix this into the final blend of the rye sourdough which is eaten for gut health, appetite control ( it works!) . I am not sure yet about the flavor as compared to yellow corn meal. It could be bland but it is still a good product to try.

Fun for cornbread
I just like the look and flavor of this blue cornmeal in my gluten free cornbread recipe. Yum!

I made cornbread with this the other night... It was delicious! We especially enjoyed the slightly crunchy/chewy texture. Flavor was sooooo good also. Will use medium grind cornmeal from now on.

I bought this blue meal not only for the cool blue color, but because blue cornmeal has a higher protein level than yellow. I made my famous cornbread with it instead of the regular organic yellow meal that I still love, and it came out very crunchy. so the blue cornmeal is much coarser than the yellow. I will try next batch to let the meal soak in the liquid of a recipe for a few hours before mixing and baking right away (like I do waffle batter), in hopes to soften it. The flavor was good in the cornbread, but it was much like crunching on birdseed.

I am SO happy to find this cornmeal here at Vitacost. It's a great price, and this is very a hard-to-find item. I can now make blue cornbread, pancakes, and waffles again! My whole fam loves it.
