Bob's Red Mill Millet Flour Gluten Free -- 23 oz
I mix this in with muffins, pancakes, breads, etc. and I feel that it adds a crumbly texture to baked goods that is very tasty. I feel good feeding it to my son and eating it myself.

Great for gluten-free baking
I use millet flour for my gluten-free baking. I make a gluten-free flour mix using 1/2 cup of millet flour along with 1 cup teff flour, 1/2 cup white rice flour, 2/3 cup potato starch and 1/3 cup tapioca flour. Mix all together and store in fridge until ready to use. Yields 3 cups of gluten-free flour mix. I use this whenever gluten-free flour is called for in a recipe (or in place of wheat flour in a non gluten-free recipe) and it works great! Vitacost has the lowest price for millet flour that I have found. Highly recommend it!

a little bitter
I think this could work well once I figure out how to cut the bitterness. It's also on the dry side. Make sure to use plenty of oil.

Product was good but the packaging was not totally sealed at the manufacturing company.
