Great Whole Wheat Product
I had wheat berries once in a salad at Panera Bread and decided to try to have it at home. And, since Bob's Red Mill as a brand never disappoint me so far, I decided to order a bag from them. Apparently there are several different varieties of wheat (hardy red, red, hard white, etc etc) I decided on soft. I was thinking the "softer" it is the easier it is to cook. Cooking it is straightforward. And if you are in a hurry, soaking it overnight will help soften it even more and thus decreasing cooking time.
I use it in salads, in soups and stews, add to yogurt at breakfast, possibilities are endless! It has a soft,chewy and nutty texture. Great way to add more protein and fiber to your meals. I have not tried grinding it into flour yet. (Maybe later!)
Great product, highly recommended. Now that I have tried the soft white berries, I am thinking of trying the other varieties next and see how they compare.
Tip, if you have a rice cooker, this cooks easily in a rice cooker. I soak it overnight, Then the next morning cook it like rice in the rice cooker. 2 cups water per 1 cup berries. I usually cook 1-2 cups and keep it in the fridge, and use it all week.

growing wheat grass
When it's winter I'll be using a lot of these berries as cooked cereal, Right now I'm growing wheat grass for my pet rabbit. She says she really likes wheat grass from these berries.
