An old-fashioned favorite, the bran muffin mix is made with traditional ingredients like slowly stone-ground, 100% whole grains, with no additives or preservatives ~ simply add a fresh egg, oil (or applesauce) and milk - then bake this healthy food and enjoy hot and fresh from the oven!


Basic Bran Muffins

1 box (7 oz) Hodgson Mill Bran Muffin Mix

1 Tbsp butter or vegetable oil

1/2 cup 2% milk

1 egg


Preheat oven to 400 F. Line 6 muffin cups with paper liners or grease muffin cups. Place contents of package into mixing bowl; cut in butter or vegetable oil. Add milk and egg. Mix well until moist. Let sit in bowl for 10 minutes. Spoon batter into paper liners or greased muffin cups.

Optional: Add 1/2 cup raisins, chopped apples, shredded carrots or zucchini.

Bake 15 minutes. Yield: 6-7 muffins.

Good, and SOOO Versatile I have six muffin recipes I make from this one little box: Banana Bran Muffins, Raisin Bran Muffins, Blueberry Bran Muffins, Pineapple Bran Muffins, and Gogi Berry Bran Muffins. To make these completely dairy free I omit all butter, milk and/or eggs and simply add 1/2 can pureed pumpkin in it's place. This makes 6 good-sized muffins, and I top them with Trader Joes Pear Sauce. I have no other box in my pantry that is as versatile as this is, and at this very moment, I have 4 boxes waiting for me!
