Basic Risotto Recipe
1 Tbsp. olive oil
1 large onion, chopped
1 cup Lundberg® Arborio Rice
½ cup white wine (optional) 4 cups hot chicken broth or wter
¼ cup grated Parmesan cheese
In a heavy 3 quart saucepan, saute onion in olive oil over medium heat, until onion is softened.
Add Arborio rice, and saute 1-2 minutes until grains are coated.
Add wine and stir constantly on medium heat until wine is absorbed
Add hot broth, 1 cup at a time, stirring after each addition until broth is absorbed; about 20-25 minutes. the risotto should be cream; add more liquid if a creamier texture is desired.
Remove from heat, stir in cheese and serve immediately. For variety, add fresh herbs and chopped vegetables during the last 5 minutes of cooking.
