I just tried these for the first time, sauteed in coconut oil with cherry tomatoes, mushrooms and a rice/quinoa blend... Topped on grilled chicken breast...
MONEY... The only difference next time is the chicken will be marinated as well..

Used for Greek Chicken Pasta with Olives and Feta.
When combined, you know the artichokes are there but they do not dominate the dish.
Next up is White Pizza! I just know they will be perfect!

Good for snacking!
I love this little jar of goodness! I throw the contents of the jar on a bed of lettuce and it makes my salad a meal for lunch or snack.

Tender, light deliciously fresh
These are a real treat! The dressing is so light and not heavy with oil. The artichokes are tender, no fibrous leaves so I can easily enjoy each piece. I can eat them straight from the jar or as part of an appetizer, but I especially like putting them over a can's worth of rinsed beans over a bed of arugula or other greens. Makes for a fast, easy, complete meal that's very satisfying. If you like artichokes, you'll like these. If you have never tried any, get these, I have never had artichoke hearts as tender as these.
