I love this coconut flour!
One reviewer (at least) spoke of the texture & taste of the coconut flour...Let me share a recipe with you that is AWESOME and that I will be surprised if anyone you serve it to would know that it was gluten and grain free!
Coconut Flour Chocolate Pumpkin Muffins or Quick bread
Yields: 8-10 muffins or 24 mini-muffins or 1 loaf of quick bread
1/2 cup coconut flour
1/3 cup softened butter, avocado oil or coconut oil or oil of your choice
2/3 cup pumpkin purée
1/2 cup erythritol
30 drops Vitacost stevia extract
(instead of the erythritol and stevia extract, you can omit both of them and sub in 18 packets of Truvia or the Aldi brand of Stevia packet that has erythritol in it. Try your batter to see if it needs more sweetener. The batter will be sweeter than the end product, typically. If using sugar, use 3/4 cup.)
1/4 cup Hershey’s cocoa
1/8 tsp salt
1/2 tsp. vanilla extract
1/4 tsp. baking soda
1/2 tsp baking powder
1/2 tsp xanthan gum or glucomannan
Beat the above thoroughly, until kind of airy, and then add:
2 tsp. apple cider vinegar
Mix just until incorporated into the batter and pour into greased muffin tins or a greased Pampered Chef bread pan. Place in a preheated, 350 degree oven. Bake loaf for about 40-50 minutes, muffins for 18-24 minutes or 12-15 minutes for the mini muffins. DONT overbake! Serve with butter, cream cheese, cream cheese frosting, a chocolate cream cheese frosting or a chocolate frosting. The coconut flour taste does NOT come through. I LOVE this MOIST recipe! It is even a yummy idea for breakfast with a cuppa joe! (If you are a Trim Healthy Mama plan follower, this is an S.)

I follow the SANE method so coconut flour was supposed to help me bring baked goods back to my diet. This is the only brand I have tried so I don't know if all coconut flours are supposed to cause grainy baked goods, or if it is just this one. I'm not sure if I am willing to invest in another brand to find out. Every recipe I have tried bakes up beautifully but there is very little flavor and the graininess is just not for me.
