Apricot kernels are simply the edible seeds of apricots. Nutty flavored with a hint of amaretto, they are a close relative of the almond. Apricot kernels are one of the highest natural sources of a rare substance called amygdalin, also known as vitamin B17, an important nutrient which has largely disappeared from Western diets. A cholesterol-free food, apricot kernels are also loaded with healthy plant fats, protein and iron.
