Take dinnertime to the next level with this creamy, lightly sweet risotto, made from Arborio rice, colorful butternut squash and the perfect blend of flavorful seasonings. Serve this Italian dish as a side or as an integral part of the main course.

Bring 2 quarts water or stock to a simmer water or stock to a simmer and reserve. Heat 2 tablespoons olive oil in a large sauce pan over medium heat. Add 1 cup Vitacost® Butternut Squash Risotto, stir to coat thoroughly and cook for 2-3 minutes. Add 1/4 cup of reserved liquid to rice and stir until absorbed. Repeat until all reserved liquid is absorbed, rice is firm and risotto mixture reaches a creamy consistency, about 18-23 minutes. Serves 4.
