I have to say its better than what I made at home
I was not sure how it will be like, but I was surprised that its light, easy mix and the taste it nice. Its hard to do gluten free with light flavor and don't feel heavy after having it.
The basic recipe is good, but I want to play with it and see how to make it best. But Its my fav recipe so far, now I have to keep some stock since I live over seas.
One more thing, I like the ingredient because no dairy and no nuts. It was very hard for me to find locally without dairy.

We made these Buckwheat pancakes with 1/2 ground apple and blueberries. They were really good.

Fantastic Tasting Pancake Mix
This is the first time i've tried any of the Vitacost mixes. This one was great. I made the pumpkin for one batch - replacing eggs with chia seeds - i added a lot more liquid then what the recipe called for. Then the 2nd batch i just made without eggs, again more liquid as i like my pancakes thinner.

Rubbery and no buckwheat taste
These were very disappointing. I had been looking forward to a yummy buckwheat pancake. What I got was a rubbery, rice flour pancake with a smidgen of buckwheat thrown in as afterthought.

Where's the Buckwheat?
The mix tasted fine, it's just that any sense of buckwheat is nearly undetectable. It is a pure white, highly refined flour. I prefer buckwheat that is brown and whole-grain in texture and flavor.I was looking for a departure from the usual rice-based product, but this was not it.
