Ever try those boxed quinoa and spice blends? They’re convenient (and quite delicious!) when you’re running short on time, but if you check the ingredients, you may find a few additives and preservatives your body could do without. MSG, anyone?
If you’re looking for a way to turn plain quinoa into something delicious, try my easy recipe — it’s loaded with a few spice-cabinet favorites to create a quick and flavorful dish you can serve either as a side or main course. Plus, you don’t have to pay extra for the “convenience” of anything that comes in a box – it’s good for your wallet and your belly!
Ingredients:
- 1 cup quinoa
- 1 ¼ cups filtered water
- 1 can (15 oz) kidney beans (BPA-free can) or beans of choice
Spices: - ¼ tsp. each: crushed red pepper flakes, garlic powder, onion powder, dried basil, dried oregano, sea salt and black pepper
- ½ tsp each: ground cumin, chili powder
Directions:
- Rinse quinoa really well with a fine mesh strainer then combine with 1 ¼ cups filtered water in a cooking pot.
- Measure out spices in a small bowl, then add to cooking pot.
- Bring to a boil, then cover and simmer 15 minutes.
- Serve with beans for a main meal {optional} or enjoy as a side dish sans beans.
