Spiced Quinoa and Beans

Ever try those boxed quinoa and spice blends? They’re convenient (and quite delicious!) when you’re running short on time, but if you check the ingredients, you may find a few additives and preservatives your body could do without. MSG, anyone?

If you’re looking for a way to turn plain quinoa into something delicious, try my easy recipe — it’s loaded with a few spice-cabinet favorites to create a quick and flavorful dish you can serve either as a side or main course. Plus, you don’t have to pay extra for the “convenience” of anything that comes in a box – it’s good for your wallet and your belly!

Directions:

    1. Rinse quinoa really well with a fine mesh strainer then combine with 1 ¼ cups filtered water in a cooking pot.
    2. Measure out spices in a small bowl, then add to cooking pot.
    3. Bring to a boil, then cover and simmer 15 minutes.
    4. Serve with beans for a main meal {optional} or enjoy as a side dish sans beans.
